Trail mix granola bars


  • 2 cups puffed rice
  • 3/4 cup nut butter
  • 1 tbsp coconut oil
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1/4 cup raisins
  • 1/3 cup honey
  • 2 tbsp chia seeds
  • 1 tsp vanilla


  • line a baking pan with parchment paper
  • mix all dry ingredients in one bowl, wet ingredients in another. Then stir the two together. Best to use your hands to make sure all the mixture is well combined
  • Place everything into the baking pan, then place into the freezer. Wait at least 60 minutes to let everything harden. 
  • Once hardened, cut into bars. Store what you don't eat back into the freezer.
