Buckwheat Pancakes

Serves: 1


  • 1/2 cup buckwheat flour
  • 1 small banana
  • 1 egg


  • Put all ingredients into a high speed blender and blend together
  • Heat a skillet on medium with coconut oil or olive oil
  • Pour the mixture onto the skillet and cook each side for 15-30 seconds. The first pancake takes the longest to make
  • Once done add your favourite toppings like banana, maple syrup, nut butter and berries
  • Enjoy!
