Burrito Bowls

Serves: 4

  • 2 Chicken breast
  • 2 tbsp olive oil
  • 2 tbsp maple syrup
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cayenne
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp pepper

    Beans & Corn

  • 1 cup canned black beans
  • 1 cup frozen corn
  • 1/2 yellow onion
  • 1/3 tsp cayenne
  • 1/2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper


  • 2 large tomatoes
  • Handful of cilantro
  • 1 yellow onion
  • Juice of 1 lime
  • 1 tbsp olive oil
  • 1 tsp garlic
  • salt & pepper to taste


  • 2 Large avocados
  • Salt & pepper to taste
  • 2 cups cooked brown rice
  • Olive oil
  • Mixed greens
  • Preheat the oven to 350 degrees
  • In a bowl add all the chicken ingredients together. Rub everything into the chicken well. Then add chicken onto a baking tray and bake for 20-25 minutes. 
  • To make the salsa you'll need a cutting board. Then dice the tomatoes. Do the same with the onions. Now add all the salsa ingredients into one bowl and mix everything together.
  • To make the black beans & corn, you'll also need to dice the onion. Then on a skillet over medium heat drizzle some olive oil and add the onion. Cook until translucent. Then add the beans, corn and spices and let simmer for 5-10 minutes. 
  • To make guac or the avocado portion. You just need to cut the avocado into small cube size pieces, put into a bowl, and mix with salt & pepper.
  • Once the chicken is done, take it out of the oven and let it cool for 10 minutes. Once it's done cooling cut the chicken in to small cube sized pieces. 
  • Now to assemble the bowl you'll want to add a handful of mixed greens to the bottom of each bowl. Then add 1/2 cup of cooked brown rice in the center of the bowls. Now add 1/3 cup of chicken, 1/3 cup of beans & corn, 1/3 cup of salsa and avocado as desired to each bowl. 
  • Feel free to serve with corn tortilla chips, hot sauce or shredded cheese as well. Enjoy!
