Rainbow Salad



Serves: 4-6

Ingredients

  • 1 16 oz can of chickpeas
    or you can do 1/2 cup black beans, 1/2 cup kidney beans & 1/2 cup chickpeas
  • Handful of cilantro
  • Handful of microgreens
  • 1/2 cup yellow bell pepper
  • 1/2 cup orange bell pepper
  • 1/2 cup cherry tomatoes
  • 1/2 cup cucumber
  • 1/2 cup onions
  • 1 Large avocado
  • 1 tsp garlic powder
  • 1/2 tsp cumin powder
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 3 tbsp olive oil
  • 1/2 lemon juiced

Instructions

  • Chop up your bell peppers, tomato, cucumber, avocado and onion into small cube sized pieces and put them into one bowl
  • Now finely chop your microgreens and cilantro, add it into the veggie bowl
  • Open up your can of beans, rinse them and add them to the bowl
  • Add your spices: garlic, cumin, salt & pepper
  • Add your olive oil & lemon juice
  • Stir everything together, taste test, adjust spices if needed and serve when satisfied!
