- 2 1/2 cups spelt flour
- 1/2 cup pumpkin puree
- 2 eggs
- 1 cup coconut sugar
- 1/2 cup coconut oil
- 1 cup oat milk
- 2 tsp cinnamon
- 1 tsp vanilla extract
- 1 tsp baking soda
- pinch salt
Preheat oven to 350 degrees
Heat coconut oil on a pan at medium heat until it turns to liquid. Then transfer it into a bowl
- Now add your eggs, oat milk, vanilla extract and pumpkin puree into the bowl with coconut oil. Whisk together.
- In a separate larger bowl mix you spelt flour, coconut sugar, baking powder, cinnamon and salt together.
- Now add the coconut oil mixture into the dry mix. Stir everything together.
- Pour mixture into a baking tray that has moulds or cups in them.
Bake for 20-25 minutes. Cool for 10 when done baking
