Pumpkin Muffins

  • 2 1/2 cups spelt flour
  • 1/2 cup pumpkin puree
  • 2 eggs
  • 1 cup coconut sugar
  • 1/2 cup coconut oil
  • 1 cup oat milk
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • pinch salt


  • Preheat oven to 350 degrees

  • Heat coconut oil on a pan at medium heat until it turns to liquid. Then transfer it into a bowl

  • Now add your eggs, oat milk, vanilla extract and pumpkin puree into the bowl with coconut oil. Whisk together.

  • In a separate larger bowl mix you spelt flour, coconut sugar, baking powder, cinnamon and salt together.

  • Now add the coconut oil mixture into the dry mix. Stir everything together.

  • Pour mixture into a baking tray that has moulds or cups in them. 

  • Bake for 20-25 minutes. Cool for 10 when done baking
