Spicy Roasted Red Pepper Hummus
- 1 red pepper
- 1 14oz can of chickpeas
- 1 large garlic clove minced
- 2 tbsp olive oil
- 1 tbsp tahini
- 1 tbsp lemon juice
- 1 tsp paprika
- 1/4 tsp cayenne
- 1 tsp salt
- 1 tsp pepper
- Set oven to 350 degrees
- Wash the peppers, take out the core, get rid of any seeds and cut into four pieces
- Put peppers in a bowl. Then drizzle a bit of olive oil and sprinkle salt + pepper into the same bowl. Massage the peppers.
- Then put the peppers in a baking tray and bake them for 25 minutes. Once done let them cool for 10 minutes.
When the peppers are finished you can put all ingredients into a food processor or high speed blender. Blend until your reach desired consistency
Blend everything together. If it's too thick and you want a smoother consistency then you can add 1/4 cup of water.
Once finished serve and enjoy!
